Green Tea Cooler - Costa Style but way cheaper hehe

On the way to London a few weekends ago we stopped at the services. At the Costa they had this Green Tea Cooler which I'd thought I'd try. It was really good! So good I decided to try and make one myself at home.

In the blender I added:

Cup of Green Tea (cooled)
Handful of ice
A few mint leaves
Juice of half a lime

And just whizzed it together! So simple and perfect for cooling down with. I also reckon a big jug of this made with added vodka or rum would make a fabulous cocktail but sssshhhhh don't tell anyone I said that teehee!

Bacon Onion Rings! OMG!

Prepare yourselves for the ultimate taste sensation!
Ingredients:
Onion cut into rings
Streaky Bacon or Pancetta

Method:
Wrap bacon around the onion rings.
Bake in a hot oven for about 15mins until cooked and crispy.

How simple?

Enjoy!

Do 'Slimming' clubs really have our best health interests at heart?

So last week I found myself with a little bit of time on my hands (very unusual believe me!) This is something I've wanted to work out for a while. No offence meant to any Slimming Worlders out there but I'm too shocked and disgusted not to share. It caused quite a stir when I shared my info on social media sites. But what I also found more shocking was that in the discussions/debates that took place only a few actually commented on the total sugar amount. A lot went into defensive mode (the Slimming World followers mainly!) but on the flip side I had many messages of thanks for bringing this to their attention and they seemed genuinely concerned about their daily sugar consumption.

I am not writing this to scare monger anyone. I just simply wish to draw attention to the fact that the majority of people do not know exactly what they are eating. They see the words 'Low Fat' and 'Fat Free' and assume they are good choices. It is a shame we are mislead in such a dishonest fashion through advertisers and big brands who at the end of the day just want to make a sale and get their money, do they really care about our health?

What I did was observed a typical Slimming World followers day. I was even lenient, 
I could of chosen much worse examples to show you!

Firstly our recommended daily amount of sugar is 90g.
This typical day abiding by Slimming World guidelines adds up to 142.6g!

Here is a detailed breakdown to prove I am not exaggerating. 
I have listed veggies and fruits but will not be counting these Natural sugars in the totals.


Breakfast:
35g serving of Frosted Wheats (apparently a healthy option B) = 11g of sugar.
Served with a Vanilla & Choc Mullerlight = 12.2g of sugar
Also served with 1 Banana & about 2 handfulls of fresh Raspberries.

Lunch:
Jacket Potato with beans and dairylea.
Baked beans = 20.6g of sugar
4 Dairylea light triangles (an healthy option A) = 4g of sugar
Large side salad with lettuce, tomatoes, cucumber and mixed peppers.

Dinner:
Super Speed Curry (SW recipe) served with Curry Loaf.

Curry was made with the following:
Tin of beans = 20.6g of sugar
Tin of mushy peas = 3.4g of sugar
and chicken, onions, courgettes and peas.

Curry Loaf Ingredients:
Batchelors Savoury Rice = 10.6g of sugar
Tin of Chickpea Dahl = 7.6g of sugar

Free Snacks:
Mugshot Sweet & Sour = 13.8g of sugar
Toffee Mullerlight = 12.3g of sugar
and an apple, pear and grapes.

SYNS:
Curly Wurly = 12.4g of sugar
Freddo= 10g of sugar
Options Hot Choc = 4.7g of sugar.

Bringing a total of 142.6g of Sugar.
Which = 35 teaspoons of sugar!!!
Shocked????

I have spent many hours now studying packages of food products that are recommended by Slimming World and I feel genuinely concerned for their followers health. I know a lot of it lays with the followers choice. So I beg of you to READ the packages before you make your 'Healthy' choices.

For example:
These new flavoured milks by Tesco which Slimming World allows you to have around 190ml as a 'Healthy A Choice'
Let me share these facts:
Tesco Flavoured Strawberry Milk contains 19g of sugar per serving (200ml)
Tesco Flavoured Banana Milk contains 21g of sugar per serving (200ml)
Tesco Flavoured Chocolate Milk contains 25g of sugar per serving (200ml)

So you are looking at anything between 4-7 teaspoons of sugar in a single serving.
This is NOT a healthy choice!

After watching Dispatches last night on Channel 4 about "The Truth of Low Fat Food" I feel it left people even more confused. We get told to eat a certain way and then they flip it over and we get herded into another eating direction. It was truthful in the fact that there is more sugar in a Light Apple Muller Rice than a single donut. It was truthful in the fact that many slimming club brands food products contain more sugar than fellow non slimming club brands. It was also shocking that meat labelled as 'Lean Mince' contained more fat that a normal pack of mince. If the brands can not get their labels correct what chance do we have?

My view is clear, we do not need high amounts of refined sugar in our daily diets, eating sugar creates a need/want to eat more sugar. The health effect of long term sugar consumption is>



I am so happy that with Paleo I do not need to worry about these effects any more....why?...because I don't buy any packaged foods, I shop down 3 isles in the supermarket: Meat, Veg and Fruit isles. I just worry for friends & families health, today and for their futures. I know it is impossible to predict what could happen but surely we have a role to ourselves to help minimize any health problems we could possibly face in the future.

What a crazy upside down world we live! - What is Socially Acceptable?

I have been brewing this blog post in my brain for a few weeks now and thought today I am just going to put it out there. Last time I checked, this was my blog which will contain MY opinions so don't shoot me ;) ok here we go.....

What is socially acceptable?

Social Drinking
I love my detox waters, I find them refreshing, tasty and they have their benefits. I used to have a normal clear plastic water bottle that I would cram whatever goodness I could find into, mint leaves, celery, cucumber, ginger etc I would then take this out and about with me in my bag. I shall use one experience that springs to mind but it happened numerous times!
 I work as a Nanny so one day I was waiting in the playground, without thinking I stood sipping my water and thought nothing of it. Then I became aware of one woman nudging the other women she was standing with and nodding her head in my direction. This made me feel very self conscious. Then the next thing I knew she was standing in front of me and said these exact words "I have to ask what on earth you are drinking, it looks like seaweed" I replied with the list of ingredients to which she promptly then said "Urgh that's disgusting" and walked off laughing. I then watched her tell her friends and they all pulled childish playground faces of disgust (very apt this was taking place in a playground ha). I then glanced round at the other parents in the playground and noticed one lady drinking a can of Coca Cola (full sugared) and then I noticed a man was carrying a Coca Cola bottle.

Sharing Foodie Photos
I love looking at peoples foodie photos almost as much as I love taking them. 
My example:
This has happened to me and I have seen it happen to ALOT of others.
I LOVE my green smoothies & Juices and I think they look great, they taste amazing and are full of bright green colour and again they carry great health benefits. But sharing this love through photos is tricky. If you upload a photo of a yummy green juice you are guaranteed to get a little comment backlash of  "Eurgh" "looks disgusting" "looks manky" "that makes me feel sick" the list goes on! 
But when someone uploads a photo of  the empty packaging of a MacDonalds meal they have just devoured, they get a load of likes and people *drool*

Eating Out
One of the most challenging things when trying to eat clean is eating out. Trying to suss out something on the menu that is not a carb overload or deep fried is challenge enough, let alone the 20 questions you then get if you don't want to have chips, or would like to replace foods with a salad. 
I have two examples so far of this. Visiting a local chain pub for a meal and asking to not have the peas or chips with my steak, to instead just have a side salad. The look on this woman's face was of utter horror, so much so she had to repeat it back to me "what no chips or peas???" If I had ordered my steak with chips, peas, garlic bread, deep fried mushrooms and extra chips, she probably would not of batted an eyelid.
I have also visited a Mexican restaurant recently when I asked not to have rice with my meal and got pretty much the same reaction. But if I had asked for rice, nachos and wedges he would not of cared in the slightest.

My point I am trying to make is: 
That woman would not have approached those with Coca Cola in their hands and say "urgh why are you drinking that shit, that contains about 10 teaspoons of sugar!" instead she approached me who was drinking something I class as healthy.

In all the above situations I feel like I have been outcast just for wanting to be healthier. 

Yet it goes unnoticed when people eat unhealthily and no one says a word.

This is truly one upside down world in which we live!

Food Photo Therapy & Eat a Rainbow!

Blogging always seems to happen when I have to wait in for Gift collections from my business or courier deliveries. This morning I have both. I am waiting for a lovely customer to collect her Nappy Cake and for Groupon to deliver parts that were missing with our brand new table we ordered last week. Do not get me started on the Groupon situation, absolutely shocking service and it took us to launch war through Twitter & Facebook to get a solution for our issue! oh the power of social media!

 At the moment I am also feeling like a limb has been chopped off, due to me not having my mobile phone. It decided on Saturday night that enough was enough and it switched off never to be seen again. It is ridiculous how much I am missing it. I have had to go back to using a clock for the time, a computer for emails and when I am out I am completely uncontactable (which I think I am secretly enjoying!) How did our cavemen ancestors survive without all this instant communication? I havent quite reached the need for drawing pictures on the walls yet to communicate with my man. But it could happen ;) the part I am most saddened about is the loss of ALL my photos :( a whole year in photos has vanished. Whilst I uploaded some to my Facebook & Instagram, there were lots that I didn't and now they are gone. My own fault I know, I should of backed them up, but always in the thinking....arrr it will be fine, I will do it tomorrow!. Let's hope I have learnt my lesson now.

Those of you that know me will know that I do like taking photos and I am 100% guilty of photoing most things that go onto my plate and down the hatchet. I love to cook and like to take care when presenting a meal on a plate, I believe we eat with our eyes, if it looks good it will taste good and be full of goodness so I snap a photo. Not because I am obsessed with food......ok maybe a little, but I love cooking & sharing recipes and believe it or not some people do actually enjoy seeing my photos and will then go ahead and cook them for themselves, which I find hugely flattering. 

This comment on my Scotch Bonnet Sauce Recipe made my evening!

I also believe that taking photos of the food you are eating is good therapy and a great way to be critical of what you are eating. In my meal photos I like to see colour and plenty of it, the saying I have is "Eat a Rainbow" the benefit of eating 'colours' is all the nutrients you can gain. 

I love using Instagram, to me its like one big recipe book.(id:- LyndseyG83) (shameless profile plug!) 
I follow some amazing inspiring foodies who have the same reasoning which is great for swapping tips and gaining new ideas. I am really missing that too at the minute, whats the point in cooking nice things if I can't take a photo of it to share *wink* (jokes)
To be honest I get quite a kick out of looking back through my photos of that week and seeing all the colours that I have consumed and all the goodness I have gained and it makes me feel good.

A Paleo Mexican Fiesta!

Firstly I LOVE Mexican food!
I remember being excited when I was with Slimming World and their magazine featured ways to enjoy Mexican the Slimming World way but now I have discovered Mexican the Paleo way and boy does it knock the socks off SW. It was even tastier, full of freshness and of course full of goodness. This was a celebration meal for reaching my 4 stone loss and what better way to celebrate than the Paleo way!

I had quite a few messages on Facebook asking for the recipes so I thought I would write them all up on here, in one place.

Lets start with the Fajitas, I used Turkey for the meat, fried in walnut oil with one white onion and peppers with a Fajita seasoning. I ditched the traditional tortilla wraps and we used iceberg lettuce instead to use as the wrap.
The sides were Salsa and Avocado Cream
Instead of having sour cream, I made an avocado cream which....even if i do say so myself....is one of the best things ever! Just take one ripe avocado, one clove of garlic and two tablespoons of full fat greek yogurt, whizz together until lovely and smooth. I like a kick so i added in some green jalapenos aswell!
The salsa was 5 large tomatoes, 1 red onion, 2 garlic cloves and I added in a red chili too all diced together and voila.....see I said it was simple!
We also had some cheese with I found in Aldi, nothing added on the ingredients and full fat. I love saying that, yes I ate full fat cheese :)

Then for the pier de la resistance I made some Jalapeno Poppers. Using Jalapeno peppers, slices of chorizo and pancetta. I cut the peppers in half and scrapped out the seeds. Rolled up one slice of chorizo and placed it in the centre of the half pepper and then wrapped in a slice of pancetta. Baked in a hot oven for about 15mins, until the pancetta is crisp. These were so yummy and full of flavour!

I also went all out and made a Cauliflower Mexican rice, I blitzed half a head of cauliflower in the food processor and lightly friend it with onions, garlic, peppers, chili and a spoon of tomato paste.

I could happily eat this all day every day ;)

Scotch Bonnet Sauce

My apologies for not posting much lately. I've been super busy with my business and just have not had a spare second!
I've been meaning to make a paleo tomato sauce for ages but when I spotted these little scotch bonnet beauties at Leicester market, I knew what I had planned for them!
Scotch Bonnet sauce, really tasty with a little kick. 
So  I thought I'd share my recipe.

1 onion, 
5 tomatoes, 
4 garlic cloves, 
1 red pepper, 
4 scotch bonnets, 
2tsp of paprika, 
Cup of Apple cider vinegar, 
tbsp of tomato puree.

I charred the scotch bonnets and red pepper on my hob to get a little burn on their skins to add some Smokeyness (deseeded both too).
Softened the onions first and then added everything in the pan cook for about 5mins and then blend :)
I added the scotch bonnets one at a time so I could gage how spicy it was. In the end I found 4 just perfect.
This is the tastiest sauce I have ever made and so unbelievably simple. I had enough to fill a sauce bottle and then the rest I poured into ice cube trays to freeze.
We enjoyed it poured over steak but it will be delicious with any meats or fish. Maybe stirred through some Zoodles or dipping veggies in.....it's has endless possibilities :)

Weightloss Update

Whilst I am sat waiting in for a courier delivery to arrive I thought I would give you all a quick update on how I am getting on with Paleo.
I am still very much in love with Paleo. I am sure my man is sick of me talking about it and friends are probably tired of reading my posts on Facebook. 
But when something is making you feel so much better inside and out, it is hard to keep quiet and not shout it from the rooftops.
So I am over two weeks into it now and I am still not missing any of the empty calorie carbs like pasta, rice, bread or potatoes. I really thought a longing for a chip or toast and butter might have kicked in by now, but no sign yet! I am enjoying all the meals I am having, loving the variety, colour, I definitely feel full up for longer and my meal portioning has gotten smaller as I can not eat as much as I used too.

So lets get to the nitty gritty my first week I lost 5lbs which I was amazed and so happy with and when I hopped on the scales this week (my second week) to see another 5lbs gone, I was ecstatic.....now understand why I wont shut up about it? ;) 
I know these big loses wont carry on so I am enjoying them whilst they are there :) but it excites me to look forward to next weekends weigh in. 
Since when did anyone look forward to being weighed in? 
all these veggies have invaded my brain! 

This week I have spent alot of time chatting to interested friends who wanted to find out more about Paleo and answering a lot of messages on facebook from people with in the various Paleo groups I've been posting my photos, asking about my recipes and what I use etc so the idea of my Paleo Blog was born. So I hope you enjoy!

As I have now fully embraced the Paleo lifestyle I decided a kitchen cupboard clear out was needed. That was an eye opener. 3 bags filled with half empty jars that we will no longer eat and so many things were out of date, which I am ashamed to say....by a few years!!! mega oops! but its all gone now. I just kept bits back that my man will continue to eat and voila lots of free cupboard space. The bits and bobs that have not been opened and that are in date I am donating to the local food bank, so hopefully they will do someone a good turn. 
Out with the old!


I am now off to polish my Paleo halo hehe!

No Flour Pancakes! - Blueberry & Banana



You need 1 banana & 1 egg 
- Mash banana and whisk in egg until very well combined. 
You need to use your own judgement. if you are using a biggy banana try just using half of it with 1 egg or use all of it with 2 eggs.

Get your frying pan nice and hot and fry the mixture like a regular pancake.
I find it is best to make small pancakes because the mixture is quite delicate so the smaller they are the easier they are to flip. 

When mine was in the pan frying I added a few blueberries for sweetness.
You can play around with flavours, why not sprinkle in some coconut or cinnamon for an extra flavour kick.

I served mine with fruit, sprinkle of cinnamon and a drizzle of pure honey.

Would be a yummy breakfast, snack or dessert!

Cauliflower Houmous - Chickpea free!


First I must say, I can not remember where I got this recipe from. I saved it as a screen shot on my phone and now can not for the life of me find the source. So to whose recipe this is...THANK YOU!

Second I shall say I was very sceptical about this recipe. I loved the idea but was not sure how it would turn out considering the ingredients that were going in. But boy am I glad I gave it a go.

So thirdly I will say how much I love it. It's so smooth and tastes better than the real thing. (But if you like your hummus chunky just don't blitz it for as long). It's so simple, a bung it all in job, which is always a winner and will keep in the fridge well.

Fourthly.....ok enough of that, let's get on with the recipe.....

I feel like this needs a drum roll.....hehe


You need:
*1/2 cup of walnuts (soaked overnight to soften)
6 cups of cauliflower florets (raw)
2 cloves of garlic ( I like garlic so put in 4)
4 tsp of Tahini
Juice of 1 lemon
Tsp of salt


Simply whizz it all in a blender.

I found it very thick so I drizzled in some extra virgin olive oil. If you didn't want to use oil, water would do the trick aswell.

*if you don't mind abit of texture and need to make it now, there is no need to soak the walnuts.

Chunky Slow Cooker Beef Chilli

I love Mexican food so definitely prepare yourselves for Paleo Mexican versions of my favourite recipes.
I could not find a simple paleo chilli recipe, so I thought what the neck, I can have a go at this sucker myself and hey presto the simplest chilli I've made yet!
So I hope you enjoy!


Because I was out at work all day, I dusted off the slow cooker. Nothing beats walking in the door to the smell of dinner that's all cooked.

I used a 400g organic beef flank. 
Cut into chunky cubes and put straight in the slow cooker with 
1 chunky diced white onion, 
1 crushed clove of garlic, 
1 heaped teaspoon of ground coriander, ground cumin and oregano. 
A tin of chopped tomatoes. 
Half a teaspoon of cayenne 
and 1 cup of water.


Left to cook for about 8hrs.

I served mine with some mixed peppers and courgettes with red onion.

Not a packet mix in sight = result!

Sweet Potato Blankets

This I made for dinner last night and we both really enjoyed it. But then anything wrapped in bacon is yummy, right?

I cut the sweet potatoes into wedges and wrapped them individually with bacon. Baked them in a hot oven for about 30-40 mins until the potato is soft and bacon is crisp. The smell is divine!

I served them on a bed of courgette zoodles, dressed in lime, walnut oil, fresh thyme and roasted cherry tomatoes.



So I ask you one question......
" What do you wrap in bacon?"

Honey Nutty Muesli


I've seen a lot of Muesli type recipes about but I couldn't find one using what nuts etc I already had in my cupboards. So I thought I would try my luck with what ingredients I had and see what happened.

I pre-heated the oven to 200℃ whilst I went through my nut stash to see what I had. 
I basically emptied all the packets that had been opened a while.


I will try my best to list what I used:
Pistachios, Walnuts, Seed mix, sunflower seeds, pumpkin seeds, pine nuts, almonds.
I also added some Goji Berries and dried mango chopped up.
Really just what ever nuts, seeds or dried fruits you can lay your hands on will work. 

Lay mix on baking paper and spread out so it's even.
Pop in the oven for 2/3mins. All ovens are different so don't go far as you need to keep watch. You really don't want burnt nuts!

Once they look slightly golden. Take out the tray and give a shake to turn the nuts over. Drizzle evenly with some pure honey and pop back in the oven for 1/2mins remove once golden.
Leave to cool right down. 

Once cool break up and pop in a air tight container.

This was my weekend treat so I enjoyed it with some full fat yogurt (after eating them watery mullerlights for so long. I forgot just how gorgeously creamy the real stuff is!) I also drizzled a little extra honey over the top..but.. ssshhhh don't tell anyone!

Hearty Beef Stew

Eating Paleo does not mean it has to be all salads. This heart Beef stew was a winner. Left in the slow cooker whilst we was out at work so when we got home the house smelt amazing and dinner was done!
You need:
Stewing Steak. (I found some great quality, grass fed stewing steak at Aldi)
3 White Onions
What ever veggies you wish. I used carrots, turnips and parsnips.
2 garlic cloves
Inch of fresh ginger
1 whole red chilli
1pint of water.

You do:
Heat up a frying pan and sear the cubes of stewing steak. Once nicely browned put into the slow cooker.
Slice the onions and fry them in the same pan that the beef was in. The onions will brown and caramelise whilst soaking up the juices from the steak (mouth watering stuff this!) Once onions have browned add them into the slow cooker.
Add in your chopped veggies. Crushed garlic, thinly sliced ginger and the chilli (leaving it whole, this will be removed before serving) plus the pint of water.
Leave in slow cooker for around 6/7 hrs.

When I got home I realised I had some brussels left over so I quickly thinly sliced them and added them to the stew for the final minutes before serving.
It had been a miserable rainy day, so to come home to this warming hearty dinner was a treat. The warming taste of the chilli and ginger really bring it alive.

Paleo Chicken & Vegetable Stack Burger

This is the simplest burger I have ever made. No mincing, no mess, no hassle!
You need: (per burger)
Chicken Breast
2 Flat Mushrooms

Optional fillings:
Chargrilled onion
Chargrilled courgette
Chargrilled aubergine
Crispy bacon
Avocado Cream

You do:
Put the chicken breast into a plastic sandwich bag or between 2 sheets of cling film and hit with a rolling pin. Just to flatten it out a little.
Fry in a lightly oiled pan.
Chargrill your chosen veggies. On a griddle pan. Plus the two mushrooms.

When all is cooked. Layer up your burger using the 2 mushrooms as the bun. Adding in what ever other fillings you fancy.
For 'fries' I used blanched sugar snaps.

Quick, delicious and filling!

Lemon Chicken with Avocado Cream

I had brought a pack of chicken breasts that contained 3. So I used 2 for the Chicken & Bacon Dippers and had a lonesome one left. So I poached it in boiling water over a medium heat with a sliced lemon. Perfect for lunch the next day.
The avocado cream I made in my blender. I put in 1 avocado (stone out and skin off) 1 garlic clove and a tiny splash of coconut water just to loosen it. The blitzed until smooth. I make this every week now, it's a great addition to any meal and so handy to have ready

Salad Salsa is something else I make sure to have ready in the fridge. I just finely chop tomatoes, cucumber, onion, celery and peppers, add lemon juice and parsley and store in an air tight container.
When chicken was cooked I left it to cool and then layered my salad with lettuce, chicken, salad salsa and topped with the avocado cream.
It definitely made me look forward to lunch time!

Pepper Baked Eggs

I love having this for breakfast. So colourful, tasty and takes no time at all to cook.
You need:
Eggs
Peppers
Tomatoes

You do:
Slice the peppers quite thickly, enough to hold an egg.
Lay the sliced pepper in a hot pan with a little oil. Crack an egg into their centre and fry until egg is cooked.

Hint!
While cracking the egg into the pepper ring, hold down the pepper to avoid egg leaking out underneath. You can let go once the bottom of the egg starts cooking and it should then hold in place.

I then threw in some tomatoes to warm through and voila! Done!

Chicken & Bacon Dippers

This was my first proper Paleo meal creation. It was simple and tasty, it has now become a weekly regular.
You need:
Chicken Breasts
Bacon
Tomatoes
Savoy Cabbage
Red Cabbage
White Onion

You do:
Slice breasts into thick chicken strips and wrap the bacon round them individually. I cut the tomatoes in half and lay cut side facing up with the chicken. These bake lovely and their flavour really comes out.
Lay on grease proof and bake in the oven 200℃ for about 15mins.
You may notice in my photo they are layed on top of potatoes. The potatoes are for my wonderfully supportive man to enjoy!
The cabbages and onion just thinly slice and when chicken is ready, quickly stir fry and serve. I used walnut oil for this.
