Weightloss Update

Whilst I am sat waiting in for a courier delivery to arrive I thought I would give you all a quick update on how I am getting on with Paleo.
I am still very much in love with Paleo. I am sure my man is sick of me talking about it and friends are probably tired of reading my posts on Facebook. 
But when something is making you feel so much better inside and out, it is hard to keep quiet and not shout it from the rooftops.
So I am over two weeks into it now and I am still not missing any of the empty calorie carbs like pasta, rice, bread or potatoes. I really thought a longing for a chip or toast and butter might have kicked in by now, but no sign yet! I am enjoying all the meals I am having, loving the variety, colour, I definitely feel full up for longer and my meal portioning has gotten smaller as I can not eat as much as I used too.

So lets get to the nitty gritty my first week I lost 5lbs which I was amazed and so happy with and when I hopped on the scales this week (my second week) to see another 5lbs gone, I was ecstatic.....now understand why I wont shut up about it? ;) 
I know these big loses wont carry on so I am enjoying them whilst they are there :) but it excites me to look forward to next weekends weigh in. 
Since when did anyone look forward to being weighed in? 
all these veggies have invaded my brain! 

This week I have spent alot of time chatting to interested friends who wanted to find out more about Paleo and answering a lot of messages on facebook from people with in the various Paleo groups I've been posting my photos, asking about my recipes and what I use etc so the idea of my Paleo Blog was born. So I hope you enjoy!

As I have now fully embraced the Paleo lifestyle I decided a kitchen cupboard clear out was needed. That was an eye opener. 3 bags filled with half empty jars that we will no longer eat and so many things were out of date, which I am ashamed to say....by a few years!!! mega oops! but its all gone now. I just kept bits back that my man will continue to eat and voila lots of free cupboard space. The bits and bobs that have not been opened and that are in date I am donating to the local food bank, so hopefully they will do someone a good turn. 
Out with the old!


I am now off to polish my Paleo halo hehe!

No Flour Pancakes! - Blueberry & Banana



You need 1 banana & 1 egg 
- Mash banana and whisk in egg until very well combined. 
You need to use your own judgement. if you are using a biggy banana try just using half of it with 1 egg or use all of it with 2 eggs.

Get your frying pan nice and hot and fry the mixture like a regular pancake.
I find it is best to make small pancakes because the mixture is quite delicate so the smaller they are the easier they are to flip. 

When mine was in the pan frying I added a few blueberries for sweetness.
You can play around with flavours, why not sprinkle in some coconut or cinnamon for an extra flavour kick.

I served mine with fruit, sprinkle of cinnamon and a drizzle of pure honey.

Would be a yummy breakfast, snack or dessert!

Cauliflower Houmous - Chickpea free!


First I must say, I can not remember where I got this recipe from. I saved it as a screen shot on my phone and now can not for the life of me find the source. So to whose recipe this is...THANK YOU!

Second I shall say I was very sceptical about this recipe. I loved the idea but was not sure how it would turn out considering the ingredients that were going in. But boy am I glad I gave it a go.

So thirdly I will say how much I love it. It's so smooth and tastes better than the real thing. (But if you like your hummus chunky just don't blitz it for as long). It's so simple, a bung it all in job, which is always a winner and will keep in the fridge well.

Fourthly.....ok enough of that, let's get on with the recipe.....

I feel like this needs a drum roll.....hehe


You need:
*1/2 cup of walnuts (soaked overnight to soften)
6 cups of cauliflower florets (raw)
2 cloves of garlic ( I like garlic so put in 4)
4 tsp of Tahini
Juice of 1 lemon
Tsp of salt


Simply whizz it all in a blender.

I found it very thick so I drizzled in some extra virgin olive oil. If you didn't want to use oil, water would do the trick aswell.

*if you don't mind abit of texture and need to make it now, there is no need to soak the walnuts.

Chunky Slow Cooker Beef Chilli

I love Mexican food so definitely prepare yourselves for Paleo Mexican versions of my favourite recipes.
I could not find a simple paleo chilli recipe, so I thought what the neck, I can have a go at this sucker myself and hey presto the simplest chilli I've made yet!
So I hope you enjoy!


Because I was out at work all day, I dusted off the slow cooker. Nothing beats walking in the door to the smell of dinner that's all cooked.

I used a 400g organic beef flank. 
Cut into chunky cubes and put straight in the slow cooker with 
1 chunky diced white onion, 
1 crushed clove of garlic, 
1 heaped teaspoon of ground coriander, ground cumin and oregano. 
A tin of chopped tomatoes. 
Half a teaspoon of cayenne 
and 1 cup of water.


Left to cook for about 8hrs.

I served mine with some mixed peppers and courgettes with red onion.

Not a packet mix in sight = result!

Sweet Potato Blankets

This I made for dinner last night and we both really enjoyed it. But then anything wrapped in bacon is yummy, right?

I cut the sweet potatoes into wedges and wrapped them individually with bacon. Baked them in a hot oven for about 30-40 mins until the potato is soft and bacon is crisp. The smell is divine!

I served them on a bed of courgette zoodles, dressed in lime, walnut oil, fresh thyme and roasted cherry tomatoes.



So I ask you one question......
" What do you wrap in bacon?"

Honey Nutty Muesli


I've seen a lot of Muesli type recipes about but I couldn't find one using what nuts etc I already had in my cupboards. So I thought I would try my luck with what ingredients I had and see what happened.

I pre-heated the oven to 200℃ whilst I went through my nut stash to see what I had. 
I basically emptied all the packets that had been opened a while.


I will try my best to list what I used:
Pistachios, Walnuts, Seed mix, sunflower seeds, pumpkin seeds, pine nuts, almonds.
I also added some Goji Berries and dried mango chopped up.
Really just what ever nuts, seeds or dried fruits you can lay your hands on will work. 

Lay mix on baking paper and spread out so it's even.
Pop in the oven for 2/3mins. All ovens are different so don't go far as you need to keep watch. You really don't want burnt nuts!

Once they look slightly golden. Take out the tray and give a shake to turn the nuts over. Drizzle evenly with some pure honey and pop back in the oven for 1/2mins remove once golden.
Leave to cool right down. 

Once cool break up and pop in a air tight container.

This was my weekend treat so I enjoyed it with some full fat yogurt (after eating them watery mullerlights for so long. I forgot just how gorgeously creamy the real stuff is!) I also drizzled a little extra honey over the top..but.. ssshhhh don't tell anyone!

Hearty Beef Stew

Eating Paleo does not mean it has to be all salads. This heart Beef stew was a winner. Left in the slow cooker whilst we was out at work so when we got home the house smelt amazing and dinner was done!
You need:
Stewing Steak. (I found some great quality, grass fed stewing steak at Aldi)
3 White Onions
What ever veggies you wish. I used carrots, turnips and parsnips.
2 garlic cloves
Inch of fresh ginger
1 whole red chilli
1pint of water.

You do:
Heat up a frying pan and sear the cubes of stewing steak. Once nicely browned put into the slow cooker.
Slice the onions and fry them in the same pan that the beef was in. The onions will brown and caramelise whilst soaking up the juices from the steak (mouth watering stuff this!) Once onions have browned add them into the slow cooker.
Add in your chopped veggies. Crushed garlic, thinly sliced ginger and the chilli (leaving it whole, this will be removed before serving) plus the pint of water.
Leave in slow cooker for around 6/7 hrs.

When I got home I realised I had some brussels left over so I quickly thinly sliced them and added them to the stew for the final minutes before serving.
It had been a miserable rainy day, so to come home to this warming hearty dinner was a treat. The warming taste of the chilli and ginger really bring it alive.

Paleo Chicken & Vegetable Stack Burger

This is the simplest burger I have ever made. No mincing, no mess, no hassle!
You need: (per burger)
Chicken Breast
2 Flat Mushrooms

Optional fillings:
Chargrilled onion
Chargrilled courgette
Chargrilled aubergine
Crispy bacon
Avocado Cream

You do:
Put the chicken breast into a plastic sandwich bag or between 2 sheets of cling film and hit with a rolling pin. Just to flatten it out a little.
Fry in a lightly oiled pan.
Chargrill your chosen veggies. On a griddle pan. Plus the two mushrooms.

When all is cooked. Layer up your burger using the 2 mushrooms as the bun. Adding in what ever other fillings you fancy.
For 'fries' I used blanched sugar snaps.

Quick, delicious and filling!

Lemon Chicken with Avocado Cream

I had brought a pack of chicken breasts that contained 3. So I used 2 for the Chicken & Bacon Dippers and had a lonesome one left. So I poached it in boiling water over a medium heat with a sliced lemon. Perfect for lunch the next day.
The avocado cream I made in my blender. I put in 1 avocado (stone out and skin off) 1 garlic clove and a tiny splash of coconut water just to loosen it. The blitzed until smooth. I make this every week now, it's a great addition to any meal and so handy to have ready

Salad Salsa is something else I make sure to have ready in the fridge. I just finely chop tomatoes, cucumber, onion, celery and peppers, add lemon juice and parsley and store in an air tight container.
When chicken was cooked I left it to cool and then layered my salad with lettuce, chicken, salad salsa and topped with the avocado cream.
It definitely made me look forward to lunch time!

Pepper Baked Eggs

I love having this for breakfast. So colourful, tasty and takes no time at all to cook.
You need:
Eggs
Peppers
Tomatoes

You do:
Slice the peppers quite thickly, enough to hold an egg.
Lay the sliced pepper in a hot pan with a little oil. Crack an egg into their centre and fry until egg is cooked.

Hint!
While cracking the egg into the pepper ring, hold down the pepper to avoid egg leaking out underneath. You can let go once the bottom of the egg starts cooking and it should then hold in place.

I then threw in some tomatoes to warm through and voila! Done!

Chicken & Bacon Dippers

This was my first proper Paleo meal creation. It was simple and tasty, it has now become a weekly regular.
You need:
Chicken Breasts
Bacon
Tomatoes
Savoy Cabbage
Red Cabbage
White Onion

You do:
Slice breasts into thick chicken strips and wrap the bacon round them individually. I cut the tomatoes in half and lay cut side facing up with the chicken. These bake lovely and their flavour really comes out.
Lay on grease proof and bake in the oven 200℃ for about 15mins.
You may notice in my photo they are layed on top of potatoes. The potatoes are for my wonderfully supportive man to enjoy!
The cabbages and onion just thinly slice and when chicken is ready, quickly stir fry and serve. I used walnut oil for this.

Paleo Dippy Eggs and Soldiers

I have loved dippy eggs and soldiers since I was a little one. It excites me I can still enjoy dipping, just with a slight twist. A healthier and yummier twist!
I used a muffin tin, lightly greased the holes with Olive Oil so the bacon and eggs did not stick. 
Using the bacon I lined around the outside of the holes and cracked an egg in the middle.
Baked in a hot oven until whites were firm, bacon was crisp and yolk runny. 
Took about 10mins but best to keep an eye on them.
For dipping I washed some mangetout and enjoyed them raw

I couldn't resist making a face, dippy eggs bring out the inner child!

Positively Paleo - Inform & Inspire!

This has been one interesting week. My first week following Paleo and it has gone swimmingly in a food sense. I have thoroughly enjoyed the new challenge with cooking Paleo. But it really has not been that challenging. The guidlines are so simple and when you cut out all the other rubbish it simplifies your options and makes it so much easier. All you need is good quality meats a selection of nutrient dense vegetables, some herbs and spices and away you go! a little fruit and some nuts to snack on and that has basically been my week! simples! and I have loved every second of it. I have also felt huge benefits already, which to be honest I really was not expecting so soon. I have never slept better, I have oodles of new found energy, a general feeling of well being and the best part I have not been starving hungry. 
Not forgetting how cost effective it is.

Is Quality Better Than Quantity? Does Size Matter?

Is it more about what you do with something, 
is quality better than quantity??


You could probably ask this about a few things in our lifestyles. 

- Friendships, surely it's better to have few quality friends than a quantity of not so good friends. 
- Time spent with family, quality time spent doing something together, making memories, than just all sitting in the same room on various technologies no speaking.
And the last one which springs to mind and I know you are all thinking of....in the bedroom......honestly can you think of nothing else from a innocent title like that....well it got your attention....but don't leave me now, stay with me!

I'm thinking of our plates, yes I'm talking about food.......again, I know!  Food seems to take up so much of my thinking at the moment. Changing eating plan has inspired me so much with new recipes, new foods, new ways of cooking and techniques and of course new debates in my head. 
After having a rather hefty two sided debate in my mind during housework this morning, I've decided to pop it all down here. Hopefully it will help relinquish the thoughts in my over active brain and plus I love hearing your views and reading your comments!

Ok back to that pesky plate. 
When you plate up a meal/snack do you go for quantity? or quality?


For the last 8 months I've been following the Slimming World Extra Easy Plan, Consisting of vegetables, fruits, meats (with fats cut off), white potatoes, pasta, rice all being on the 'free' food list where you can eat as much as you like. With one portion of dairy and one portion of bread, nuts or cereals. (being also aware of superfree foods and speed foods also.) Then on top having up to 15 syns to use a day on extra foods, for example, crisps, chocolates, sauces or alcohol. 

(For non Slimming Worlders a 'syn' is worth 20 calories.)


Please be aware I  am in no way knocking Slimming World or it's followers. I am extremely grateful to SW for giving me the tools, support & guidance to loose 3st 7lbs. So I am proof it does work. But since switching to Paleo, I've just been thinking more about the amounts available to eat on the SW plan. (see previous warrior blog post for reasons why I switched.)

The Paleo Way is a back to basic way of eating and cooking, similar to our ancestors in a hunter gatherer kind of way. Eating real food and no processed, manufactured, artificial or refined foods. No white potatoes, pasta or grains......yes you read that correctly none of them (to be perfectly honest I haven't missed any of the bulky carbohydrates yet!). You can also enjoy vegetables, fruits, eggs, nuts, seeds, seafood, meats with their own fat (this is good fat). It is preferable that the meat you consume is as pure as possible, meaning nothing added to it like water, stabilizers etc and that it is grass fed, outdoor bred, dare I say the word Organic!

To be honest I used to tut and roll my eyes whenever I heard the word 'organic' thinking it's just a chance for supermarkets to charge more and grow their profit margins but then I never really took the time out to read and learn about it. Which is very narrow minded of myself, I know......please don't shoot! 

But since I began my mini research mission I've discovered that one of the benefits of eating good ethically raised meat is that they have higher amounts of protein than non free range farmed animals and of course protein is essential to help fuel our bodies. Many other good factors of course include supporting our British farmers and our local economy. I've also found by shopping around it really isn't that much more expensive (aka my new found love, Aldi!) And you get a warm fuzzy feeling knowing you've helped a little farmer somewhere in the country ;)

So back to quantity vs quality.


Is it better to have a plate full to the brim of foods, 

just because they are deemed 'free' 


Or

Is it better to have a moderately portioned plate of meat and veggies that are nutritionally dense and completely cut out all other 
processed food products?



Here is a personal plate comparison of two meals I have cooked.

The first being a meal I cooked whilst on Slimming World. Using 'free' foods and an allowance of cheese and sauces (which were syned) It is an extreme, this was probably one of the biggest meals I ever had on SW.

 The second is a meal I prepared last night the Paleo way.


I see a huge difference. I know which one I prefer now. The top is actually making me feel abit queasy at the thought and sight. But hey I'm being honest and this is what I've eaten. 
I know now what I choose to eat more of in the future.


Part of the reason why I left Slimming world is because I was beginning to worry about the diet, low fat, fat free options and processed foods you were allowed. Now I know I didn't have to shove them in my gob, no one had me at gun point, as far as I'm aware, but when its deemed as 'allowed', you kind of trick yourself into thinking arrrrrr its ok to eat this Mugshot, then have 2 Mullerlights and then have a pasta sauce washed down with 3 cans of diet drinks....and that's just for breakfast.....ok, I am joking, I honestly never did any of that but I know people and I've seen the photographic proof on Instagram that this does happen. Its easy to think it's all free so what the heck.
I just began to ask myself, "Everything on this plate, do I really need it?"
I've also seen other plates from Slimming Worlders who have enjoyed a chicken curry with rice, potato wedges and a syned naan bread. It really is not necessary for that many carbs on one plate....eek!........hold on just stepping off my soap box.......

The ingredients then really began to concern me. When I read the ingredients on a few products and I didn't know what half of them were, I got concerned, what was I feeding into my body, what kind of long effect were these ingredients having on me and my insides. I also wasn't feeling much of health boost to be honest. I suffer with terrible monthly woes that only a woman would know about ;) aswell as a few other things (which I will discuss at a later date) but I had just had a feeling I wasn't helping myself as much as I could.
That is my own personal opinion and why I changed lifestyle plan.

The simpleness of the Paleo lifestyle has been a breath of fresh air this last week. Completely cutting out all those processed foods, means they are no longer an option and I dont get the temptation, they are not on my list and therefore take up non of my thoughts. I'm enjoying the simplicity of Meat & Veggies, a little fruit, snacking on nuts. I've realised a diet doesn't need to be a complex web. 
I am only in day 4 of my new plan, I know its far too soon to tell any real difference. But I awoke this morning after the best nights sleep I have had in a long time. I've been full of energy all day. Had no temptation to snack, my breakfast kept me going until lunch and my lunch is still keeping me going until dinner in an hour or so. It could possibly be all in my head at the moment, the psychology of eating all this goodness, who knows. All I know is I feel better for it.

Well I think I have reached to my own conclusion, in my eyes the quality of food that goes into my mouth far outweighs the option of quantity I could potentially eat. And size does certainly matter to me, moderation is key.

Whilst on my googling rampage I came across this, its very inspiring, thought provoking, relatable and fully inspired me. Enjoy.

"It is not hard. Don’t you dare tell us this is hard. Beating cancer is hard. Birthing a baby is hard. Losing a parent is hard. Drinking your coffee black. Is. Not. Hard. You’ve done harder things than this, and you have no excuse not to complete the program as written. It’s only thirty days, and it’s for the most important health cause on earth – the only physical body you will ever have in this lifetime.

Don’t even consider the possibility of a “slip.” Unless you physically tripped and your face landed in a box of doughnuts, there is no “slip.” You make a choice to eat something unhealthy. It is always a choice, so do not phrase it as if you had an accident. Commit to the program 100% for the full 30 days. Don’t give yourself an excuse to fail before you’ve even started.

You never, ever, ever have to eat anything you don’t want to eat. You’re all big boys and girls. Toughen up. Learn to say no (or make your mom proud and say, “No, thank you”). Learn to stick up for yourself. Just because it’s your sister’s birthday, or your best friend’s wedding, or your company picnic does not mean you have to eat anything. It’s always a choice, and we would hope that you stopped succumbing to peer pressure in 7th grade.

This does require a bit of effort. Grocery shopping, meal planning, dining out, explaining the program to friends and family, and dealing with stress will all prove challenging at some point during your program. We’ve given you all the tools, guidelines and resources you’ll need, but take responsibility for your own plan. Improved health, fitness, and quality of life doesn’t happen automatically just because you’re now taking a pass on bread.
You can do this. You’ve come too far to back out now. You want to do this. You need to do this. And we believe that you can do this. So stop thinking about it, and start doing."

This is one of the longest posts I've written in a long time and now I'm beginning to know how Carry Bradshaw feels so I'm going wrap this baby up before I spend the rest of the day shoe shopping and stuffing cupcakes!

I just hope that my new lifestyle choice does pay off, shedding a few more stones, being healthier not just on the outside but on the inside aswell. Otherwise I could end up back at Slimming World with my tail between my legs haha
