Lemon Chicken with Avocado Cream

I had brought a pack of chicken breasts that contained 3. So I used 2 for the Chicken & Bacon Dippers and had a lonesome one left. So I poached it in boiling water over a medium heat with a sliced lemon. Perfect for lunch the next day.
The avocado cream I made in my blender. I put in 1 avocado (stone out and skin off) 1 garlic clove and a tiny splash of coconut water just to loosen it. The blitzed until smooth. I make this every week now, it's a great addition to any meal and so handy to have ready

Salad Salsa is something else I make sure to have ready in the fridge. I just finely chop tomatoes, cucumber, onion, celery and peppers, add lemon juice and parsley and store in an air tight container.
When chicken was cooked I left it to cool and then layered my salad with lettuce, chicken, salad salsa and topped with the avocado cream.
It definitely made me look forward to lunch time!
