Honey Nutty Muesli


I've seen a lot of Muesli type recipes about but I couldn't find one using what nuts etc I already had in my cupboards. So I thought I would try my luck with what ingredients I had and see what happened.

I pre-heated the oven to 200℃ whilst I went through my nut stash to see what I had. 
I basically emptied all the packets that had been opened a while.


I will try my best to list what I used:
Pistachios, Walnuts, Seed mix, sunflower seeds, pumpkin seeds, pine nuts, almonds.
I also added some Goji Berries and dried mango chopped up.
Really just what ever nuts, seeds or dried fruits you can lay your hands on will work. 

Lay mix on baking paper and spread out so it's even.
Pop in the oven for 2/3mins. All ovens are different so don't go far as you need to keep watch. You really don't want burnt nuts!

Once they look slightly golden. Take out the tray and give a shake to turn the nuts over. Drizzle evenly with some pure honey and pop back in the oven for 1/2mins remove once golden.
Leave to cool right down. 

Once cool break up and pop in a air tight container.

This was my weekend treat so I enjoyed it with some full fat yogurt (after eating them watery mullerlights for so long. I forgot just how gorgeously creamy the real stuff is!) I also drizzled a little extra honey over the top..but.. ssshhhh don't tell anyone!
