No Flour Pancakes! - Blueberry & Banana



You need 1 banana & 1 egg 
- Mash banana and whisk in egg until very well combined. 
You need to use your own judgement. if you are using a biggy banana try just using half of it with 1 egg or use all of it with 2 eggs.

Get your frying pan nice and hot and fry the mixture like a regular pancake.
I find it is best to make small pancakes because the mixture is quite delicate so the smaller they are the easier they are to flip. 

When mine was in the pan frying I added a few blueberries for sweetness.
You can play around with flavours, why not sprinkle in some coconut or cinnamon for an extra flavour kick.

I served mine with fruit, sprinkle of cinnamon and a drizzle of pure honey.

Would be a yummy breakfast, snack or dessert!
