Pepper Baked Eggs

I love having this for breakfast. So colourful, tasty and takes no time at all to cook.
You need:
Eggs
Peppers
Tomatoes

You do:
Slice the peppers quite thickly, enough to hold an egg.
Lay the sliced pepper in a hot pan with a little oil. Crack an egg into their centre and fry until egg is cooked.

Hint!
While cracking the egg into the pepper ring, hold down the pepper to avoid egg leaking out underneath. You can let go once the bottom of the egg starts cooking and it should then hold in place.

I then threw in some tomatoes to warm through and voila! Done!
