Paleo Chicken & Vegetable Stack Burger

This is the simplest burger I have ever made. No mincing, no mess, no hassle!
You need: (per burger)
Chicken Breast
2 Flat Mushrooms

Optional fillings:
Chargrilled onion
Chargrilled courgette
Chargrilled aubergine
Crispy bacon
Avocado Cream

You do:
Put the chicken breast into a plastic sandwich bag or between 2 sheets of cling film and hit with a rolling pin. Just to flatten it out a little.
Fry in a lightly oiled pan.
Chargrill your chosen veggies. On a griddle pan. Plus the two mushrooms.

When all is cooked. Layer up your burger using the 2 mushrooms as the bun. Adding in what ever other fillings you fancy.
For 'fries' I used blanched sugar snaps.

Quick, delicious and filling!
